If all are priests, for whom do they mediate? It is nonsense to say you mediate your own self.
There is only one mediator between God and men: Our Lord and Savior Jesus Christ.
For there is one God, and there is one mediator between God and men, the man Christ Jesus, (1 Timothy 2:5 ESV)
The Bible describes all believers as a "royal priesthood" because we can go boldly to the throne of grace:
But you are a chosen race, a royal priesthood, a holy nation, a people for his own possession, that you may proclaim the excellencies of him who called you out of darkness into his marvelous light. (1 Peter 2:9 ESV)
and you shall be to me a kingdom of priests and a holy nation. These are the words that you shall speak to the people of Israel." (Exodus 19:6 ESV)
and made us a kingdom, priests to his God and Father, to him be glory and dominion forever and ever. Amen. (Revelation 1:6 ESV)
and you have made them a kingdom and priests to our God, and they shall reign on the earth." (Revelation 5:10 ESV)
Let us then with confidence draw near to the throne of grace, that we may receive mercy and find grace to help in time of need. (Hebrews 4:16 ESV)
For every high priest chosen from among men is appointed to act on behalf of men in relation to God, to offer gifts and sacrifices for sins. 2 He can deal gently with the ignorant and wayward, since he himself is beset with weakness. 3 Because of this he is obligated to offer sacrifice for his own sins just as he does for those of the people. (Hebrews 5:1-3 ESV)
So also Christ did not exalt himself to be made a high priest, but was appointed by him who said to him, "You are my Son, today I have begotten you"; (Hebrews 5:5 ESV)
There is only one priest who mediates for us today: Jesus. The OT sacrifices are all fulfilled in Christ.

The concept of a priest makes no sense without mediation. Mediation is what priests do, by definition.
Yes. Jesus is our High Priest. We do not need "priests" to mediate for us today. We can mediate for ourselves by going directly to Jesus, our High Priest:)
Why would I go to a sinful priest when Jesus is a perfect man, without spot or sin. Jesus is the only priest who has never sinned:
Therefore, holy brothers, you who share in a heavenly calling, consider Jesus, the apostle and high priest of our confession, (Hebrews 3:1 ESV)
14 Since then we have a great high priest who has passed through the heavens, Jesus, the Son of God, let us hold fast our confession.
15 For we do not have a high priest who is unable to sympathize with our weaknesses, but one who in every respect has been tempted as we are, yet without sin. 16 Let us then with confidence draw near to the throne of grace, that we may receive mercy and find grace to help in time of need. (Hebrews 4:14-16 ESV)
Jesus is the only Priest. He makes intercession for us at the right hand of the Father:
(for the law made nothing perfect); but on the other hand, a better hope is introduced, through which we draw near to God. (Hebrews 7:19 ESV)
Consequently, he is able to save to the uttermost those who draw near to God through him, since he always lives to make intercession for them. (Hebrews 7:25 ESV)
Jesus said to him, "I am the way, and the truth, and the life. No one comes to the Father except through me. (John 14:6 ESV)
For Christ has entered, not into holy places made with hands, which are copies of the true things, but into heaven itself, now to appear in the presence of God on our behalf. (Hebrews 9:24 ESV)
Who is to condemn? Christ Jesus is the one who died--more than that, who was raised--who is at the right hand of God, who indeed is interceding for us. (Romans 8:34 ESV)
